The alcohol is then removed and replaced with pure kosher vegetable glycerin to provide a sweet tasting alternative to alcohol. Some fresh plant constituents, namely chlorophyll, do not dissolve well in glycerin but gather on the surface, resulting in the characteristic residue around the bottle neck and dropper.
